Irish Soda Bread - Pat's Recipe

My wife Pat (both of her parents were born in Ireland - from Roscommon and Monaghan) has baked Irish Soda Bread since we were first married in 1970.  It's delicious, and here's the recipe:

3 cups of flour
2 1/2 teaspoons of baking powder
1/2 teaspoon of salt
1 teaspoon of baking soda
1 egg
1/4 cup of sugar
3/4 cup of raisins
1 1/4 cup of buttermilk
5 teaspoons butter

Doubled, this recipe makes three 10" round soda breads.

bake at 375 F. degrees  for 45 to 50 minutes

Pat mixes the dry ingredients, then melts the butter over the raisins in a microwave for a few seconds.


She then hand mixes all the ingredients together, and hand fills the 10" pie plates.


Placed in a pre-heated 375F degree oven, for 45 to 50 minutes.


She takes them out, cools them on a rack, and we eat them with butter till they disappear.


(It only takes a few minutes to disappear if we have guests.)
